Instant Pot Hamburger Soup!

Baby It's cold outside!

Perfect weather for a hearty and delicious soup.

If you don't have an Instant Pot, you can certainly just brown the burger and add the other ingredients and let is simmer away on the stove for an hour or so.



Ingredients:

  • 2 teaspoons avocado or olive oil

  • 1 lb Graze The Prairie Hamburger

  • 1 small onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 1 sweet potato, diced

  • 2 tablespoons tomato paste

  • 1 14.5 oz can diced tomatoes

  • 3 cups beef broth

  • 1 clove garlic, minced

  • 1 teaspoon sea salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon thyme

  • 1 tablespoon parsley

  • 1 bay leaf

Directions:

Set your Instant Pot to saute, add oil and hamburger. Cook until browned.

Add remaining ingredients, stir to combine.

Lock the lid and set Instant Pot to Manual for 15 minutes.

I usually let the Instant Pot naturally release for 5-10 minutes, but I am sure quick release works great!


NOTE: I don't peel my potatoes or carrots, just give them a good scrub. I use Organic produce, preferably local. And I prefer Muir. Glen Organic Fire Roasted Tomatoes.

If I don't have homemade beef bone broth, I use better than bullion roasted beef base.

To change it up a little I sometimes add green beans.

If I cook it on the stove, I sometimes toss in some fresh kale or spinach at the end and let it wilt.
